ThePolyScience® Rotary Vacuum Evaporator package gives you unlimited possibilities in evaporation, distillation, concentration of flavors, and purification of liquids. The main components are a rotary evaporator, the PolyScience LM6 Mini-Chiller, and a vacuum aspirator pump. The vacuum aspirator pump enables evaporation at temperatures as low as 95°F/35°C. The included PolyScience LM6 Mini-chiller cools the condenser coil of the Heidolph VAP Advantage Rotary Evaporator to -10°C, maximizing condensation. It is possible to create two completely different products from one technique and a single ingredient. Obtain essential oils that can be used to infuse or intensify flavor without affecting texture or composition of your creation. While most chefs are familiar with regular distillation process, this technology adds another dimension: it works under reduced pressure, which lowers the boiling point to as low as 95°F/35°C. By remaining at such low temperatures, valuable flavor compounds are preserved and will add to complexity of the result.
What is the PolyScience® Rotary Vacuum Evaporator
In both traditional chemistry labs and our culinary technology lab, the rotary evaporator, is an instrument used to distill a solvent. The purpose of distillation is to separate a given mixture into its components based on their respective volatilities, through the process of evaporation and condensation (liquid-gas-liquid).
Why use The PolyScience® Rotary Vacuum Evaporator
We use the Rotary Vacuum Evaporator for two main purposes: 1) to concentrate non-volatile components in a mixture (for example, concentrating the purest and freshest flavors from a blood orange by removing the water), and 2) to extract the volatile aroma and flavor molecules from mixtures gently and at low temperatures (for example, extracting the desired flavors from a blend of alcohol, herbs, and fruit without heating the mixture up).The key to understanding any distillation is to remember that it is a separation. Sugars, acids, colors, and most bitter compounds are separated from aromas, alcohols, water, and small flavor molecules, etc. What is phenomenal about Rotary Vacuum Evaporator distillation, as opposed to standard distillation, is that it can separate food compounds from one another without altering them. A rotary evaporator makes a clear distillate in the collection flask that will hold powerful aromas and sometimes flavour too. It is only the part of a food that would normally boil at 100c or less at sea level that will produce a distillate. The remainder will stay in the evaporating flask.This process can lead to some remarkable outcomes. For example with coffee, a smooth coffee flavour and aroma is captured in the collecting flask because, as the bitter compounds have a very high boiling point, they remain in the evaporating flask. Black pepper is another, the volatile aromas make their way to the collecting flask to create a crystal clear, intensely pepper flavoured liquid leaving the solid pepper particles behind. Cabbage is very interesting, the less pleasant, volatile odours associated with cooking cabbage pass through to the collection flask leaving the more pleasant vegetable flavours in the evaporating flask.
