The day is structured into two focused sessions.

Gastronomy Session (Culinary Focus)

This session is centred around kitchen applications and plated food.

The Pacojet is well known as the ‘Ice Cream Machine’ so we want to educate operators and show them the versatility of the machine. With this in mind, we will do demos of both savoury and sweet preparations such as purées, sauces, soups, dressings, farces, ice creams, and sorbets.

Techniques for improving texture, consistency, and presentation

Examples of how to utilise trim and secondary cuts to reduce waste and increase yield

Discussion around menu development and efficiency in service

This session will primarily appeal to chefs, pastry chefs, and kitchen teams.

Mixology Session (Bar & Beverage Focus)

This session shifts the focus to drinks, bar applications, and flavour innovation.

This will include:

  • Creation of cocktails, frozen components, foams, and infusions
  • Techniques for achieving unique textures and flavour clarity in drinks
  • Use of Pacojet for rapid infusion, batching, and consistency in service
  • Exploration of how frozen preparation can elevate both alcoholic and non-alcoholic offerings

Session Format

The sessions will be a mix of guided demonstration and interactive participation. While not fully hands-on for every attendee (due to time and equipment constraints), there will be plenty of opportunity for questions, discussion, and close-up engagement with the process and results. We will be bringing at least three demo machines with us as well as a lot of frozen recipes so we will try to get as much ‘hands on’ as time allows.

Live demonstrations covering both sweet and savoury applications (e.g. sorbets, ice creams, purées, farces, sauces)

Do Attendees Need a Pacojet?

Not at all. The session is fully suitable for those who do not yet own a Pacojet, as well as current users.

In fact, it’s an ideal opportunity for prospective customers to understand the value and versatility before investing.

Pace & Flow of the Day

Both the morning and afternoon sessions will follow a structured but engaging flow:

  • Introduction & overview
  • Core demonstrations (progressing from simple to more advanced applications)

  • Interactive discussion and Q&A

The pace will be steady and informative, allowing time for explanation and engagement, rather than a fast-paced or overly technical format and each session should take two to three hours depending on involvement and time constraints.

Overall, we see this as a focused, high-value experience—giving attendees direct access to Pacojet knowledge, practical insights they can apply immediately, and a clear understanding of how it can benefit their operation.
