Cured Cod cooked Sous Vide

Cured Cod cooked Sous Vide Fish and Seafood

Ingredients

  • 4 Cod Portions, each 150g

Cure Ingredients

  • 150g Sea Salt
  • 150g Sugar
  • 8 Peppercorns
  • 30g Chopped Dill
  • Zest of 2 Lemons

Method

We’ve all eaten cod, but curing it before cooking improves flavour and texture. This helps to elevate the cod into something that will surprise and delight.

METHOD

Stage 1

  1. Firstly you’ll need to blend the cure ingredients ready to cover your cod
  2. Place your cod portions into a tray and sprinkle with the blended mixture
  3. Now, put the tray in the fridge for 6 hours, this will firm up the flesh before cooking

Stage 2

  1. After 6 hours, thoroughly rinse the cod in cold running water
  2. Preheat your water bath to 52 degrees
  3. Place the cod portions into pouches and vac-seal
  4. Pop the sealed pouches of cod into your water bath for 50 minutes
  5. Keep checking the bath to make sure the water is covering the pouches
  6. Remove the beautifully cured cod from the pouches and serve

Chef’s Tip –

The cod can be smoked prior to cooking, after the curing.
