The team at Sous Vide Tools has been busy helping to keep the grand in the Grand Cafe, Lytham St Anne’s, by assisting with the introduction of sous vide cooking at the all day dining venue within the town’s boutique Grand Hotel.
Not your usual hotel restaurant, the Grand Café takes a relaxed approach, offering everything from nibbles to a selection of small, medium or large food plates, planks, a range of seafood, or a selection of aged steak dishes, all served up in a vibrant, cosmopolitan atmosphere.
With such a wide ranging menu and long opening hours, quality and consistency is the key challenge, which is where sous vide cooking has stolen the show. Kitchen manager Tom Webb explains: “When Sous Vide Tools was recommended to us we knew only the basics about sous vide cooking, mainly from what we had read online. The company has been invaluable in developing our knowledge, introducing new methods and recommending recipes, providing courses, recipe books and online guides.
“With the team’s help, we now have chicken breast, pork belly and lamb chump on the menu, with vegetable garnishes and poached seasonal fruits for dessert, all prepared sous vide. The star of the menu though, is a duck breast cooked pink, sliced and drizzled with chimichurri sauce.”
One of the most important benefits for Webb has been having more control and consistency in the cooking process, alongside accurate portion control and reduced wastage.
“Sous vide has allowed us to introduce items which previously would have required more time consuming and labour intensive cooking methods, but without the hassle,” he adds. “Items can be prepped well in advance, ready to be regenerated to order for service.”
So confident is the Grand Hotel of the success of sous vide, it has also employed Sous Vide Tools’ equipment to rejuvenate the menu at the group’s other property, the Grand at Grasmere country house hotel.
“We are now reliant on sous vide equipment,” says Webb, “so if something isn’t quite working we have confidence in Sous Vide Tools’ after sales support, and know that it will be resolved with little delay.”
