Salt is a relaxed, fine dining restaurant in Stratford upon Avon, serving up dishes such as lamb rump, miso glazed shoulder, barley risotto and Berkswell cheese, and desserts like Yorkshire rhubarb, Brioche custard and candied pistachio, as well as a varied tasting menu.
Founder Paul Foster stepped down as head chef at the three red AA-star Mallory Court restaurant in Leamington Spa earlier this year to follow his dream of owning his own restaurant, and reached his £100,000 target on the crowdfunding website with just 17 hours to spare.
Of the restaurant, Paul said on Kickstarter: “It’s always been my goal to have my own restaurant and it is now the time I believe I can achieve that. I didn’t want to try it too soon when I didn’t have enough experience or knowledge and I don’t want to leave it too late and miss out on a great opportunity.
“My food is modern British fine dining and when I eat out I like to feel comfortable and relaxed. This is what I want my restaurant to offer – an amazing standard of food and service in a place where you feel welcome.”
Paul’s career has been underpinned by commitment and hard work, and before his stint at Mallory Court had also worked at noted establishments such as Tuddenham Mill, Belmond Le Manoir aux Quat’Saisons and Restaurant Sat Bains as well as picking up awards such as the Observer Food Monthly Young Chef of the Year.
Now his dream has finally been realised, with the restaurant holding its grand opening on March 18th and we hope that things go from strength to strength for Paul and the team!
