Sous Vide Apricots

Sous Vide Apricots Fruits

Ingredients

  • 10 Apricots
  • 250ml Muscat
  • 2 tbsp Honey
  • 1 Vanilla Pod, split
  • 1 Rosemary Sprig

Method

METHOD

  1. Preheat your water bath to 80 degrees
  2. Cut the apricots in half and remove the stones
  3. Place the apricots in a pouch, along with the muscat, honey, vanilla pod and rosemary, and vac-seal
  4. Put the pouch into your water bath for between 18 and 20 minutes. This depends on the ripeness of your apricots
  5. Keep checking the bath to make sure the water is covering the pouch
  6. Remove the sous vide apricots from the water and refrigerate for up to 5 days until required

Chef’s Tip –

Use marmalade instead of honey and thyme instead of rosemary.
