Ingredients

  • 11lb Piece of beef brisket
  • 500ml Beef stock

BBQ Sauce

  • 1 tbsp. Sunflower oil
  • 1 onion, chopped
  • 3 cloves of garlic, crushed
  • 500ml Tomato ketchup
  • 100ml Worcestershire sauce
  • 75ml Lemon juice
  • 2 tbsp. Brown sugar
  • 1 tbsp. Malt vinegar
  • 2 tsp. Dijon mustard
  • 1 tsp. Crushed chilli flakes
  • 1 tsp. Tabasco sauce
  • 1 tsp. Dried thyme

For the Rub

  • 2 tbsp. Chilli powder
  • 2 tbsp. Mustard powder
  • 1 tbsp. Paprika
  • 1 tbsp. Ground cumin
  • 1 tbsp. Garlic powder
  • 1 tbsp. Ground black pepper
  • 1 tbsp. Caster sugar
  • 1 bay leaf, crushed

 

Equipment

  • Blender
  • BergHOFF Ceramic BBQ
  • Deep Roasting Tin
  • Tin Foil

 

Method

METHOD

  1. Begin by making the BBQ sauce. Use a frying pan to heat the oil, then cook the garlic and onion until soft.
  2. Add the remainder of the ingredients and leave to simmer for 20 minutes
  3. Transfer the ingredients to a blender and blend until smooth and set aside
  4. To make the rub, simply combine all the ingredients
  5. Rub the mix over the meat
  6. Pour the beef stock into a deep roasting tin along with half of the BBQ sauce. Place the brisket in the tin and cover with foil
  7. Cook in a preheated oven (150⁰C) for between 4 and 5 hours. The meat is ready when tender
  8. Preheat your BBQ
  9. Remove the brisket from the tin and lay on the BBQ to char (with the lid on)
  10. Turn the meat and cook for about 20 minutes, ensuring it is fully cooked through
  11. When ready, remove from the BBQ and slice into portions
  12. Serve with the remainder of the BBQ sauce
