Ingredients

  • 4 x Whole Chicory, outer leaves removed, cut in half length ways
  • 75g Honey
  • 1 tsp Crushed Roasted Garlic
  • 2 tbls Finely Chopped Rosemary
  • Zest and Juice 2 Oranges
  • 75g Salted Butter, Melted
  • 150mls Fruit Beer
  • 250g Grated Cheddar Cheese
  • Sea Salt
  • Olive Oil

Method

This dish is a great accompaniment to a game dish or simply glazed with cheese for a starter.

METHOD

  1. In a hot griddle pan with a little oil, heavily sear the cut side of the chicory until golden brown
  2. Place the glazed chicory into a vacuum pouch
  3. In a small bowl mix the honey, garlic, orange zest, juice, butter and fruit beer then season with a little salt
  4. Add the mix to the pouch and vac-seal. Cook in a preheated water bath at 88 degrees 40 minutes
  5. To serve, when the cooking time is complete, in a hot griddle caramelize the cut side of the chicory again then grill in a casserole dish with the cheddar cheese and serve

Chef’s Tip –

Chicory can be a bitter vegetable, so always use a sweet product in the pouch, maple syrup goes very well.
