Ingredients

  • 1 Kilo of Sweet Potato
  • Zest of one Orange
  • 75 grams of Melted Butter
  • 1 tsp Sea Salt
  • 2 Tablespoons White Miso Paste
  • 1tsp Roasted Garlic Powder
  • Whipped Cream Cheese

Method

  1. Wash the sweet potato
  2. Using a bbq & blow torch char & blacken the skin
  3. Place is a Sous Vide pouch
  4. Mix orange zest, melted butter, sea salt, miso paste & garlic powder together to make a purée
  5. Add purée to the pouch of sweet potato
  6. Cook in a water bath for 12hrs at 80°C
  7. For extra charring return to the grill or BBQ to finish
  8. Serve with the whipped cream cheese
