Charred Sweet Potato cooked with miso & cooked sous vide

Ingredients
- 1 Kilo of Sweet Potato
- Zest of one Orange
- 75 grams of Melted Butter
- 1 tsp Sea Salt
- 2 Tablespoons White Miso Paste
- 1tsp Roasted Garlic Powder
- Whipped Cream Cheese
Method
- Wash the sweet potato
- Using a bbq & blow torch char & blacken the skin
- Place is a Sous Vide pouch
- Mix orange zest, melted butter, sea salt, miso paste & garlic powder together to make a purée
- Add purée to the pouch of sweet potato
- Cook in a water bath for 12hrs at 80°C
- For extra charring return to the grill or BBQ to finish
- Serve with the whipped cream cheese
