Chinese Five Spice Pork Chops cooked Sous Vide Pork

Ingredients

  • 4 Pork Chops, each 280g
  • 2 Sticks Lemongrass
  • 20g Chinese Five Spice
  • 20g Fresh Coriander
  • 5g Dried Chilli Flakes
  • 1/2 tsp Salt
  • 1/2 tsp Crushed Peppercorns
  • 100ml Olive Oil
  • 1 Garlic Clove

Method

The five spice adds a mouth-watering fragrance to the chops that makes them so moorish. That coupled with crisp fat will leave you wanting more.

METHOD

  1. Preheat your water bath to 64 degrees
  2. Mix all the ingredients, except the pork chops, in a small blender or pestle and mortar to make a wet marinade
  3. Rub the marinade generously on the pork chops
  4. Now, place the chops into a pouch and use the vacuum packer to seal
  5. Now put the pouches into your water bath for 40 minutes
  6. Keep checking the bath to make sure the water is covering the pouch
  7. Finish straight onto a char-grill or griddle pan. You can place the pouches in ice water and then leave in the fridge for later if you need

To regenerate from cold place the pouch in the water bath at 62 degrees for 20 minutes and finish on a char-grill or griddle pan.
