Ingredients

  • 2 whole ham hocks
  • 200g mixed onion, carrot and celery
  • 1 tbsp. peppercorns
  • 1 bay leaf
  • 1 star anise
  • 2 tsp roasted fennel seeds
  • 500mls water
  • 200g precooked cauliflower (mostly Al Dente)
  • 200mls of rich Cheese sauce
  • 250ml of Yorkshire pudding batter
  • 100g grated mature cheddar
  • 50g panko breadcrumbs
  • 1 tbsp. whole grain mustard
  • Oil
  • 1 pinch of black pepper
  • 2 tbsp. chopped parsley

Method

  1. In a pan, place water, the mixed vegetables and spices then simmer for 20 mins. Then cool
  2. Place ham hocks in a large vacuum pouch, add chilled stock and seal pouch. Cook at 74C for 10 hours
  3. Pick the ham from the bones and mix with parsley, mustard, a pinch of black pepper and 100mls of the cooking liquor
  4. Line a container with cling film, press the ham firmly into the container and refrigerate overnight
  5. Cut the ham hock into 1-inch dice, place Yorkshire pudding tray into oven with a little oil until smoking hot. When smoking hot add the ham and then the Yorkshire pudding mix and cauliflower florets on top and bake until golden
  6. When near done, spoon over cheese sauce onto the cauliflower, then sprinkle the breadcrumbs and cheddar and glaze
  7. Serve once golden
