English Breakfast Radish Pickled with Rice Wine Vinegar and White Soy with Wasabi Mayonnaise Vegetables and Sides

Ingredients

  • 200g Small Breakfast Radish
  • 50mls Rice Wine Vinegar
  • 50g Castor Sugar
  • 50mls White Soy Sauce
  • ½ tsp Roasted Coriander Seeds
  • 200mls Homemade Mayonnaise
  • 2 tsp Wasabi Paste
  • Lime Juice

Method

This fantastic snack is great before any meal or just kick back and enjoy with a beer.

METHOD

  1. Top and tail the radish then place in a pouch
  2. In a small bowl add the vinegar, soy, castor sugar and coriander then stir to dissolve the sugar
  3. Add the vinegar to the pouch and seal
  4. Cook in a preheated waterbath at 80 degrees for 40 mins or until tender then chill down in ice
  5. In a bowl mix the wasabi with the mayonnaise and a squeeze of lemon juice. Season to taste
  6. Serve the pickled radish with the dip as a snack

The radish is fantastic in a salad, why not try a little cider and honey in the pouch?
