Sous Vide Mango

Sous Vide Mango Fruits
  • COOK TIME: 20 Minutes
  • PREP TIME: 15 Minutes
  • SERVES: 2


  • 2 Mangos
  • 150ml Coconut Milk
  • 75g Sugar
  • 1/2 Fresh Red Chilli, seeds removed
  • 1tsp Lemongrass, finely chopped
  • 1 tsp Ginger, finely chopped



  1. Preheat your water oven to 72 degrees
  2. Peel the mangos and cut the four cheeks away from the stone
  3. Place all the remaining ingredients in a pan, bring to boil to create a syrup. Simmer for 5 minutes
  4. Pass the liquid through a fine strainer or sieve and leave to cool
  5. Put the mango, along with the cooled syrup in a vacuum pouch seal with the food sealer
  6. Put the pouch into your water oven for 20 minutes
  7. Keep checking the oven to make sure the water is covering the pouch
  8. Place the pouch in ice water until cold and keep in the fridge for up to three days, or serve immediately

Chef’s Tip –

Make a syrup out of lime peel, sugar and water to poach the mango.
