Ingredients

  • 1 piece of ham – 800g
  • 80g Dijon mustard
  • 65g Maple syrup
  • 65g Honey
  • Peel of 2 oranges
  • 2 Bay leaves
  • 200ml Cola
  • 2 tbsp. of chopped thyme
  • 1 tsp. Chopped sage
  • 1 tbsp. fennel seeds
  • 1 tsp. black pepper corns
  • 2 figs, cut in half – for garnish
  • 200g rocket – for garnish

Equipment

Method

  1. Set your water bath or circulator to 65°C
  2. Place all the ingredients, except the ham, into a saucepan and simmer gently for 15 minutes. Set aside to cool
  3. When completely cold, put the liquor in a pouch, along with the ham and vac-seal
  4. Cook for 4 hours
  5. Just before the ham is ready, pre-heat your oven to 200°C
  6. When the cooking time is up, remove the ham from its pouch and roast in the oven for 10 minutes for lovely, crispy fat
  7. Using a little sugar, dust the figs and caramelize using a blowtorch and Serve with the rocket
