Miso Roasted Celeriac, Mustard and Quinoa, Feta Cheese Crumble

Ingredients

  • 1 celeriac peeled and cut into small pieces
  • 250g butter
  • 1 tbsp. miso paste
  • 6 cloves garlic
  • 5 sprigs of thyme
  • 1 tsp onion powder
  • 3 tbsp. feta cheese
  • 1 tbsp. mustard seeds
  • 250g cooked quinoa
  • 2 tbsp. of whole grain mustard
  • ¼ lemon juice
  • 5 cherry tomatoes roughly cut
  • Chopped parsley

Method

  1. Place a large pan on a medium heat then add the garlic, thyme, mustard seeds and fry for 1½ minutes. Now add the butter and foam until nut brown in colour, add the onion powder and set aside until cool
  2. Place the celeriac into a pouch, add the cooled butter and cook in a pre-heated water bath at 85C for 1 ½ – 2 hours or until tender
  3. Finish the celeriac in a hot pan until golden brown, season to taste
  4. Add oil to a pan, over a moderate heat add the tomatoes and mustard then reheat the quinoa. Add the lemon juice and parsley to serve
