Ingredients

  • 600mls sloe gin
  • Zest of 1 orange
  • Zest of half a lemon
  • 4 cloves
  • 2-star anise
  • 1 tsp crushed peppercorns
  • 1 tsp pink pepper corns
  • 2 sticks of cinnamon
  • 10 juniper berries
  • Cardamom pods
  • 2 bay leaves
  • 4 sprigs of thyme
  • 2 Rosemary
  • 2 stem Ginger
  • 50mls of stem ginger syrup
  • 150g soft brown sugar

To serve

  • Fresh cinnamon sticks
  • Ginger ale
  • Gomme syrup
  • Ice

Equipment

Method

  1. Place all ingredients (except the serving ingredients) into a pouch and vacuum seal.
  2. Place into a preheated water bath at 70c for 3 hours. Chill. Decant the liquid through a fine sieve before serving
  3. To serve, add 50mls of the Sloe Gin to a cocktail shaker with 25mls of Gomme syrup. Shake vigorously and pour over ice. Add ginger ale to taste and garnish with a cinnamon stick
