No waste – Sous Vide Tandoori broccoli stalk, lime pickle, crispy onions and yoghurt.

Ingredients

  • 6 x broccoli stalks – peeled and washed
  • 300 ml natural yogurt
  • 20g fresh raw grated ginger
  • 2 cloves grated garlic
  • 1/4 tsp salt
  • 1 1/2 tsp garam masala
  • 1 tbsp freshly chopped coriander
  • 2 onions – thinly sliced
  • 200mls milk
  • 250g plain flour seasoned with salt and pepper
  • 1 jar lime pickle
  • 1 bunch of fresh coriander

Equipment

Method

  1. In a large bowl mix 200ml yoghurt, salt, ginger, garlic and garam masala and chopped coriander
  2. Place the broccoli stalks into a vacuum pouch and add the above yoghurt mixture
  3. Seal the pouch and place in the preheated water bath for 2 hours or until tender
  4. Using a high-speed blender, puree the lime pickle adjusting the seasoning with lime, vinegar, sugar to taste
  5. Remove the onions from the milk, place into seasoned flour and deep fry until golden brown in hot oil (170 degrees )
  6. Take the cooked broccoli stalks from the pouch and in a very hot pan or BBQ heavily caramelise and set aside to serve
  7. Mix a little yoghurt with chopped coriander and a pinch of Garam masala

To serve
Place a spoon of the smooth lime pickle puree and a little masala yoghurt on the plate, top with the charred broccoli and crispy fried onions, garnish with fresh coriander and a wedge of lime.
