On the Coals Lobster Blinis I Kasai Grills

Ingredients
Shallot Butter
100g Butter
2 Shallot, Finely Chopped
½ Garlic Clove, Finely Grated
Small Pinch Maze
Small Pinch White Pepper
Blinis
1 Lobster Tail, Blanched and Shell Removed
Shallot Butter
12 Blinis
Crème Fraiche
Bronze Fennel
Method
Take things fancy for your gatherings with these simple blinis that have the wow factor.
Shallot Butter
Melt the butter and add the shallot and garlic.
Cook very gently over a low heat until soft.
Add the spices and continue to cook for a few more minutes.
Blinis
Skewer the lobster tail and brush with oil, season with maldon.
Place onto your grill and cook for 7-8 minutes, brushing with the shallot butter every time you turn it.
Remove from the grill and allow to rest.
Place your blinis unto the grill and lightly toast each side.
Slice the lobster tail into 12 pieces.
Top each blini with a little crème fraiche, a slice of lobster and a sprig of bronze fennel.
