On the Coals Smashed Burger I Kasai Grills

Ingredients
Per Burger
- 1 burger bun (top + bottom)
- 2 x 60g seasoned mince balls
(seasoned with onion powder, garlic powder, black pepper, paprika, sea salt) - 2 cheese slices
- Burger sauce
- Crinkle cut gherkins (3–4 slices)
Burger Sauce
- 5 tbsp mayo
- 1 tbsp ketchup
- 1 tsp mustard
- 1 tsp gherkin juice
- Pinch paprika
Method

Kasai Equipment Setup
Use your Kasai Grills plancha over high direct heat.
Target Heat:
- Surface temp: 220–260°C
- You want aggressive searing heat.
Method
Preheat Grill
Get the plate ripping hot. Lightly oil if needed.
Toast Bun
Place buns cut-side down on medium heat zone for 20–30 seconds until golden. Remove.
Smash Patties
Place 2 x 60g mince balls onto hottest zone.
Using a burger press:
- Smash immediately to approx 10cm wide / very thin
- Hold pressure for 8–10 seconds
Do not move them after smashing.
Season Crust (Optional Boost)
Add a pinch extra sea salt after smashing.
First Cook
Cook 60–75 seconds until deep brown crispy edges form.
Flip + Cheese
Scrape cleanly underneath, flip, add:
- 1 cheese slice per patty
Cook another 30–45 seconds
Build Burger
Bottom bun:
- Burger sauce
- First cheesy patty
- Gherkins
- Second cheesy patty
- More sauce
- Top bun
