    Orange-Glazed Carrots

    Orange-Glazed Carrots Vegetables and Sides

    Ingredients

    • 150g baby carrots
    • The zest of ½ orange
    • A pinch of salt
    • A grind of black pepper
    • A generous knob of butter

    Method

    METHOD

    1. Place the carrots in a single layer inside a vacuum sealer bag and add with the remaining ingredients. Use a Vacuum packer to seal the bag and put into the preheated water bath and cook sous vide for an hour at 85 – 90°C.
    2. Once cooked, take the bag out of the bath and plunge it into ice water to cool it rapidly and halt the cooking process.
