Ingredients

  • 1 pineapple, peeled
  • 50ml of Malibu 
  • 1 tsp. coriander seeds, toasted
  • 50g brown sugar

Method

  • Set your water bath or circulator to 85°C
  • Roll the pineapple in the brown sugar then place it into a pouch along with the vanilla and rum
  • Place the pineapple under vacuum, cook sous vide for 12 hours
  • Once cooked remove from the pouch, thinly slice and enjoy
