Ingredients

  • 500g frozen goat shoulder
  • 8 garlic cloves, minced
  • 2 small onions, chopped
  • 1 shallot, chopped
  • 1 tbsp. grated ginger
  • 1 medium potato, quartered
  • 1tbsp. cilantro, chopped
  • 2 tbsp. olive oil
  • 3 tbsp. curry powder
  • ¼ tsp. chili powder
  • 125ml tomato paste
  • 300ml chicken stock
  • Salt and pepper

Method

For a (slightly!) healthier curry, why not give goat meat a try? Cooking it in a pressure cooker will give fantastic tender meat with a stunning depth of flavour. Prepare to fall in love!

METHOD

  1. Preheat your pressure cooker, making it as hot as you can
  2. Add 1 tbsp. of the olive oil, ensuring it coats the bottom of the pot. Add the meat along with salt and pepper. Fully brown the goat shoulder then remove and set aside
  3. Reduce the cooker to medium heat, add the remaining tablespoon of olive oil and sauté the shallot, ginger and onions. After a minute, add the minced garlic and continue to fry for another 30 seconds
  4. Add the curry powder and the chili followed by the chicken stock and the goat shoulder. Finally, add the tomato paste and potatoes
  5. Close the lid and ensure it is on securely. Allow the curry to cook at high pressure for 35 minutes
  6. Once cooked, remove from the heat and allow the pressure to drop naturally
  7. Remove the lids and thicken the sauce by breaking up the potatoes. Stir in the cilantro and season to taste
  8. Serve with rice, naan bread and poppadoms
