Ingredients

  • 400g Chervil Root, peeled and washed
  • 20 Chicken Wings, trimmed to middle part
  • 2 tsp Soaked Mustard Seeds
  • 1 tsp Chopped Parsley
  • 50g Butter
  • 2 Cloves Roasted Garlic
  • Olive Oil
  • Sea Salt

Method

An under-used vegetable with a slight aniseed flavour, it pairs well with the crispy chicken wings.

METHOD

  1. Mix the butter with the roasted garlic, parsley and mustard seeds. Season with salt
  2. Add the washed chervil root to a pouch along with the butter
  3. Seal the pouch and in a preheated water bath cook the roots at 88 degrees for 45 minutes until tender
  4. Preheat an oven at 180 degrees
  5. In a sauté pan with a little oil, crisp up the chicken wings either side and season with salt
  6. Place the chicken wings into the oven and crisp up for 10 minutes
  7. Take the roots from the pouch, add to the pan and cook for a further 5 minutes
  8. Toss a little more parsley into the pan and serve

Chef’s Tip –

Why not add a rich BBQ sauce to the pouch for added flavour.
