Seaweed Gin Martini

Ingredients
360ml of good quality gin
1 tbsp of dried wakame seaweed
A piece of lime peel
120ml extra dry vermouth
To serve:
Ice
A pinch of hydrated seaweed (soaked in water)
Method
A twist on a glass martini – shaken or stirred, it is wonderfully delicious. The seaweed-infused gin gives a subtle briny tasted which makes this a delicious umami treat…and this makes the perfect pre-dinner drink to an Asian-inspired meal.
Martini a little strong? Swap the vermouth with a deliciously refreshing tonic water for a summery G&T.

In a vacuum pouch, carefully pour 360ml of good quality gin into a vacuum bag with the teaspoon of dried wakame seaweed and piece of lime peel for 2 hour at 47 degrees.
Once the gin has infused with the seaweed, strain using a sieve and set aside until completely cool.
In a cocktail shaker, fill with ice. For each martini, add 60mls of gin and 20ml of extra dry vermouth. Shake vigorously and pour into a chilled cocktail glass with a little hydrated seaweed in the bottom.
You can experiment with the quantities of gin and vermouth; the more vermouth, the “wetter” the drink, more gin – the drier!
