Ingredients

  • 300g Green Grapes
  • 100ml Quality White Wine Vinegar
  • 20ml Aged White Balsamic
  • 2 tbsp. Chopped Lemon Thyme
  • 50mls Verjus
  • 1 Cinnamon Stick
  • 1 Star Anise
  • 1 tsp Crushed White Pepper
  • 80g Sugar
  • 1 tsp Juniper Berries
  • 1 tsp Roasted Coriander Seeds

Method

This very versatile recipe gives great acidity to any game dish, pate or simply a cheese and pickle style dish.

METHOD

  1. First make the pickling liquor
  2. In a saucepan add all the ingredients except the grapes and bring to a boil, then simmer for 10 minutes and set aside to cool
  3. Cut the grapes in half, pop out any seeds with a small sharp knife
  4. Place the grapes in a vacuum pouch and add the cooled liquid. Vac-seal the pouch
  5. Cook in a preheated water bath at 58 degrees for 25 -40 minutes
  6. Chill down in ice
  7. The grapes will keep under vacuum for up to a month

Chef’s Tip –

Why not add some peeled, diced pear to the pouch also.
