Ingredients

For the Mushrooms:
3 king oyster mushrooms
100ml soy sauce,
100ml sake
50ml mirin
50g sugar

For the Carrot and Fennel Slaw:
1 carrot sliced thin
¼ fennel sliced thin
1 tbsp coriander chopped
1 tsp roasted sesame
1 tbsp vinegar
½ tsp sugar
Salt to taste

Method

  1. Pre heat your water bath to 80°C
  2. Add the soy, sake, mirin and sugar in a pan and bring to the boil. Then simmer for about 10 minutes until thickens, remove from the heat and allow to chill
  3. Pour some of the mix into a pouch then add the mushrooms and vac seal
  4. Cook at 80°C for about 15 mins
  5. Finally for the slaw, combine all the ingredients in a bowl, mix well and season to taste
