Spiced Butternut Squash with Blue Cheese And Hazelnut

Spiced Butternut Squash with Blue Cheese And Hazelnut Vegetables and Sides

  • 2 Butternut Squash – peeled, deseeded and diced ½ inch dice
  • 2 Small White Onions, finely chopped
  • 2 Cloves Garlic
  • 2 tbsp. Harissa Paste
  • 1 tsp Roasted Coriander Seeds
  • Zest 1 Orange
  • 4 tbls Chopped Coriander
  • 100g Stilton Cheese, Crumbled
  • 80g Chopped Hazelnut
  • 100g Panko Bread Crumbs
  • 75g Melted Butter
  • Olive Oil
  • Sea Salt




This recipe uses a great vegetable. Serve besides any dish or simply as a stand-alone vegetarian meal.


  1. In a small saucepan with a little oil, gently sauté the onions, garlic, coriander seeds, orange and harissa paste until the onions are translucent
  2. Mix the squash through the mix
  3. Seal the squash in a vacuum pouch and vac-seal
  4. Cook in a preheated water bath at 85 degrees for 1 hour, until tender
  5. Mix the breadcrumbs with the hazelnut, melted butter and crumbled stilton cheese
  6. Take the butternut squash from the pouch and stir in the chopped coriander. Season with salt
  7. Place the squash in a casserole dish, top with the bread crumb mix and glaze under a hot grill until golden

Chef’s Tip –

Butternut Squash is a great flavour carrier, why not add a roasted tomato sauce to the pouch.
