Sous Vide Sweet Potato Infused with Smoked Garlic, Paprika and Maple Syrup Vegetables and Sides

Ingredients

  • 1kg Sweet Potatoes, peeled and diced
  • 10 Cloves of Roasted Smoked Garlic
  • 100g Salted Butter
  • 2 tsp Smoked Paprika
  • 2 tsp Chopped Thyme
  • 50mls Maple Syrup
  • Sea Salt

  • Sous Vide Water Bath
  • Vacuum Pouches
  • Vacuum Sealer

Method

This is a wonderful potato dish with a little difference , the smoked garlic add a real kick of flavour.

METHOD

  1. First make a compound flavour butter
  2. Soften the butter to room temperature, add the cooked smoked garlic, paprika, thyme and maple syrup. Season with sea salt
  3. Place the potatoes into a pouch, add the compound butter and seal
  4. Cook in a preheated water bath at 85 degrees for 45 minutes -1 hour
  5. To serve, take the cooked sweet potato from the pouch and roast in a hot sauté pan to colour

Chefs Tip-

Why not add a deep flavoured mustard to the pouch to add a little heat
