Sous Vide Watermelon

Sous Vide Watermelon Fruits
  • COOK TIME: 2 Hours
  • PREP TIME: 30 Minutes


  • 1 Watermelon
  • 200ml Vodka
  • 50g Icing Sugar
  • 1/4 tsp Sea Salt
  • 2 tsp Tarragon, chopped



  1. Preheat your water bath to 60 degrees
  2. Peel the watermelon and remove all the white pith
  3. Dice into 1cm cubes, discarding any seeds along the way
  4. Dust the watermelon with icing sugar and season with sea salt
  5. Place the watermelon in a pouch with the vodka and tarragon. Use the vacuum packaging machine to seal
  6. Put the pouch into your water bath for 2 hours
  7. Keep checking the bath to make sure the water is covering the pouch
  8. Place the pouch in ice water until cold and keep in the fridge for up to 3 days, or serve immediately

Chef’s Tip –

Match the watermelon with strawberry juice, light ale or orange liquor
