If you’re going to take up sous vide cooking, you’re going to need some kind of vacuum sealer to remove the air from your pouches and give your ingredients a better connection to the water.

Finally, the double seam closure also helps not just to seal the pouch, but also to prevent any contamination of the water bath itself.
