If you want to see what all the fuss is about with sous vide, but don’t want to buy a water bath, perhaps because of the expense, or because you don’t have room for one in your kitchen, an immersion circulator could be the answer!
Immersion circulators simply clip onto a container and maintain the temperature to give you ultimate control over your ingredients.
We’re taking a quick look at our favourite sous vide circulators, based on their popularity, and our own knowledge and experience.
The Pro Range
Our favourite circulator for use in professional kitchens is our own Platinum model, one of the most heavy duty circulators available.
Simply clamp it to any container up to 65 litres, to give yourself your own sous vide water bath, with stirring technology to ensure there are no hot and cold spots.
The Platinum uses a 2kw heating element so that your water will heat up in even less time, with an inbuilt energy saving device so that you can leave it on once it’s reached the desired temperature.
The Platinum has a working temperature from 40˚C to 100˚C, with an accuracy of 0.03˚C and a timer which can be set between one minute and 99 hours.
It can easily be set at the push of a button too, on the wipe clean control panel, with five pre-programmes, so you can store your most commonly used times and temperatures.
However, what sets the Platinum apart is how durable it is, with a high-quality stainless-steel construction, with the motor, heating element and thermostat all surrounded by a stainless steel cage to prevent the vacuum pouches coming into contact with them, which can easily be removed for cleaning.
The Domestic Range
When it comes to home chefs, we always recommend our Ivide Wifi Cooker, which connects to your smartphone or tablet via the internet.
The Ivide Wi-Fi app means that you can control your circulator from wherever you are, meaning that you have more time to either get on with other preparation or to simply relax and get on with the rest of your day!

The ivide has a working temperature of 0˚C to 90˚C, with an accuracy of 0.1˚C and it also circulates the water at a rate of eight litres per minute, so that you won’t get any hot or cold spots in the water, all while operating almost silently.
The clothes peg clamp allows the circulator to be attached to any container of up to 20 litres, and the circulator itself can easily be stored away when it’s not in use.
