BBQ Fried Sous Vide Pork Bites, Coriander and Lime Dressing

Ingredients

  • 300g pork shoulder – 3cm cubes
  • 3 tbsp of BBQ spice blend
  • 1 tsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tbsp salt (to taste)
  • 1 tsp chopped sage
  • 100mls of sweet chilli sauce
  • ½ lime juiced
  • 1 tbsp soy sauce
  • 1 tbsp chopped coriander
  • 50g flour
  • 2 eggs lightly beaten
  • 200g panko bread crumbs

Equipment

Method

  1. Set your water bath or circulator to 80°C
  2. Place all the spices, salt, sage and cubed pork into a pouch, shake well and seal
  3. Cook for 8 hours until soft, then carefully remove the pouch and chill until firm, set and cold
  4. Carefully remove the cubes from the pouch and place onto a dry towel
  5. Set a deep fat fryer to 180°C
  6. Now gently place the pork bites through the flour, egg and breadcrumbs and deep fry at 180°C until golden and hot 
  7. For the dipping sauce combine the chilli sauce, soy sauce and lime juice and serve

Chef’s Tip:

Make a lot of these for a party or for an easy homemade snack.
