Ingredients

  • 250g white, good quality chocolate
  • 2 tbsp. of raspberry sherbet

Method

  1. Set your water bath or circulator to 90°C
  2. Place the white chocolate into a pouch and vacuum seal
  3. Cook for 12 hours, once cooked carefully remove from the pouch whilst hot and pour in between two pieces of baking paper
  4. Sprinkle over the sherbet and roll wafer thin and freeze
  5. Once chilled enjoy

Chef’s Tip:

When removing the white chocolate from the pouch add a small handful of coco pops for a more interesting texture and flavour.
