Ingredients

  • 1.5kg of dry aged rib keys / brisket
  • 1 tsp smoked paprika
  • 1 tsp ancho red chilli powder
  • 1 tsp fresh red chilli
  • 1 tsp sea salt
  • ½ tsp cracked black pepper
  • 1 tsp Garlic powder
  • 1 tsp onion powder
  • 1 tsp coriander powder
  • ¼ tsp cinnamon powder
  • 15g tomato puree
  • 10g cocoa nibs
  • 50g beef fat
  • 2 x Avocado
  • 2 x lime
  • 1 bunch fresh coriander

Method

  1. Using a blowtorch heavily caramelise the Rib keys or brisket on all sides
  2. In a bowl mix all the dry ingredients, and toss the rib keys through the mix to heavily coat
  3. Place the marinated Rib keys into a vacuum pouch
  4. Mix the tomato puree with the beef fat and pour into the pouch
  5. Seal the pouch, in a pre-heated water bath cook for 12 hours at 80 degree
  6. To serve – heavily caramelise the ribs in a hot pan with the Avocado slices, serve with lime segments and fresh coriande
