Sous Vide Confit Leeks Wrapped in Parma Ham with Mustard Vinaigrette

Ingredients

  • 3 medium sized leeks, white parts only 12cm in length
  • 4 sheets of Parma ham
  • 1 tbsp roasted garlic puree
  • 2 tbsp honey and mustard vinaigrette
  • Salt and pepper to taste

Equipment

Method

  1. Set your water bath or circulator to 88°C
  2. Spread 3 sheets of cling film onto a bench, one on top of the other and brush with a towel to remove any air pockets
  3. Layer the Parma ham out, away from you and overlapping one another. Coat the leeks in the seasoning and garlic puree
  4. Place the leeks onto the ham to form a triangle then roll it up nice and tight using the cling film
  5. Carefully place into a pouch and remove the air
  6. Cook sous vide for 1 hour or until firm
  7. Remove the roll from the pouch and allow to cool for 5 minutes, then carefully remove the cling film
  8. Now place into a hot pan and continue to caramelise all sides until golden
  9. Serve with the dressing and some salad
