Ingredients

  • 4 large chicken thighs
  • 1 tbsp. harissa spice
  • ½ zest of lemon
  • 2 sprigs of thyme roughly cut
  • 1 tsp roast garlic powder
  • Salt and pepper to taste
  • 1 bunch spring onions
  • 1 lime juiced

Method

  1. Pre-heat water bath or circulator to 68 degrees Celsius
  2. Place the chicken thighs onto a plate and rub with the harissa spice, lemon zest, thyme and garlic powder then season with salt and pepper
  3. Place the chicken into a pouch and seal
  4. Place the chicken into water bath or circulator for 6 hours, once cooked remove the chicken from the pouch and pat dry
  5. Place a pan onto moderate heat and sear the chicken thigh until golden in colour, remove the chicken from pan and add the spring onions
  6. Colour the spring onions on one side until dark and soft, then add the lime juice and season with salt
