Ingredients

  • 750ml gin
  • 200g chopped strawberries
  • 100g raspberries 
  • Zest of 1 lemon
  • 100g sugar
  • 50g red currents

Equipment

Method

  1. Set your water bath or circulator to 65°C
  2. In a pouch add all the ingredients together and seal
  3. Place in the preheated water bath for six hours minimum
  4. Refrigerate overnight
  5. Pass the mixture through a very fine sieve
  6. Serve over ice, topped with some lemonade and fresh strawberries
