Spiced Sweet Potato Wedges, Charred Sweetcorn Relish

Ingredients

  • 2 sweet potatoes – peeled and cut into wedges
  • 3 tbsp. of Cajun spice or BBQ blend spice
  • 1 tsp salt.
  • 1 ½ tsp oil
  • 1 tsp garlic powder

Method

  1. Set your water bath or circulator to 86°C
  2. Place all the ingredients into a bowl and mix well until completely covered
  3. Then place the wedges in a pouch, taking care not to overlap the wedges, vacuum and seal the pouch
  4. Cook the wedges for 45mins to 1 hour or until firm
  5. Place a medium pan on a high heat, remove the wedges from the pouch and pat dry.  Place a little oil into the pan, and quickly sear the wedges to create a crust on all sides then remove from the pan and rest
  6. Season and serve

Chef’s tip:

Serve with a sour cream and chive dip with crumbled blue cheese and crispy bacon on top
