  • 6 red plums – halved and deseeded
  • 2 tbsps. Liquid tamarind
  • ¼ tsp Chinese five spices
  • 2 tbsp. caster sugar
  • 1 tbsp. runny honey
  • Zest of ½ orange


  1. Set your water bath or circulator to 68°C
  2. In a bowl mix the tamarind, spices, sugar and honey
  3. Add the plum halves to a pouch, add the flavour mix and seal
  4. Cook in the pre-heated water bath for 1 hour or until tender to the touch

Chef’s Tip:

Try to serve the plums along side a pate or terrine to add a sharp fruit flavour
