2 Pear cut in half and core removed
2 Kaffir lime leaf finely cut up
1 Lime zested
1 tsp Icing sugar


  1. Pre heat your water bath to 75°C
  2. Dust the pears with the icing sugar, then season with the zest and kaffir lime leaf.
  3. Cook for 45 minutes or until just soft.
  4. Remove from the pouch once cooked and serve.
